After the meditation, you’re welcome to utilize Luna’s plant knowledge and shop the interior plants surrounding you, all while sipping a speciality botanical cocktail.

From Chef Cara: "Even though I had grown up traveling and living all over the world, I hadn't been exposed to much Mediterranean and Middle Eastern food until I took a trip to Greece following high school. It was there where I begin to understand the simplicity and freshness of showcasing local produce and seafood with minimal ingredients and where I fell in love with all things phyllo-wrapped. This menu is an opportunity to revisit the dishes that have influenced the work and cuisine I've specialized in for years."

Politan Group's Sophie Burton will offer a menu of specialty cocktails and wine expertly designed to pair with each course of Chef Cara’s dinner.

Cara Peterson, Chef de Cuisine, Saba Restaurant, found her way to Pomegranate Hospitality through her interest in simple but nuanced flavors. She grew up in a military family and lived in multiple cities in the United States and abroad. Her varied background provided a broad exposure to regional cuisines and uncommon ingredients. With a degree from Virginia Tech, specializing in technical writing and horticulture, she’s propelled into a creative and holistic approach to food.

While initially beginning in baking and pastry in Virginia, Peterson alternated between sweet and savory throughout her career, finding unique textures and techniques in each discipline. Working in Northern Virginia exposed her to globally curated flavors under the guise of a wine bar. But it was in Philadelphia where she served as a Pastry Chef at Zahav Restaurant from 2014 to 2015, where her interest in Israeli and Middle Eastern cuisine developed.

Following a move to New Orleans, she furthered her skills at Shaya Restaurant starting as a line cook and working her way up to executive sous chef. In 2017, she began working with Pomegranate Hospitality to open up Saba, where she is now the Chef de Cuisine.

Sophie Burton is Beverage Director for all Politan Group bars and a 17-year service industry veteran. Having worked her way through a variety of service roles, Sophie established herself as an accomplished craft cocktail bartender for places such as The Mayhaw, Cafe Henri, Saffron, and Bar Tonique. Born in Philadelphia and raised in Albuquerque, Sophie worked in Chicago at Big Star, Dove's, and Cindy's before settling in New Orleans. While not obsessing over balancing cocktails or fostering growth, Sophie spends her time rabidly following the NBA (go Sixers) and pretending that she is not thinking about Thin Lizzy.

After relocating from Los Angeles, May Mananya and Kirk Cohen are sharing their love of Thai food with New Orleans! May was born and raised in Bangkok and Kirk in Southern California. After meeting in Los Angeles, their passion for food and travel were recognized in one another and they haven’t stopped exploring and eating since! Although they share a strong curiosity for all cultures and cuisines, Thai food has been the strongest driving force in their lives as they continually strive to perfect the most authentic and traditional cooking methods of the motherland.

Long Chim, which means ‘have a taste,’ serves affordable Thai comfort food that is fresh and flavorful, uses local ingredients whenever possible, and packs a punch! Originally operating as a pop up at art markets, bars, and breweries, Long Chim is providing an exciting new variety of Thai food that also offers 100% plant based options! Charly Pierre has aspired to be a chef for as long as he can remember. Growing up in Cambridge, Massachusetts helped him adapt a broad palette of different cultures and flavors. This was reflected in Chef Charly’s household where his father was a skilled chef who trained and worked for the Marriott Hotel Group and his mother cooked Haitian dishes deeply rooted in the family’s past. As a result of this combination, Charly has long been interested in diving deeper into both these paths.

Before moving to New Orleans in the Fall of 2015 with girlfriend Minerva Chereches, Charly worked at a variety of noteworthy dining establishments in and around Boston such as L’Espalier, The Aquitaine, and Journeyman. Upon arriving in New Orleans, both Charly and Minerva acquired their first jobs at Sucre in the French Quarter. They left Sucre and went on to work at Green Goddess & Meauxbar for Minerva, and Angeline and Bayona for Charly. They ultimately left their gigs upon deciding to start their own venture.

The Fritai stall at the St. Roch Market was an amazing start. They began cooking food influenced by the cultural roots of Charly's Haitian background, while adding some inventive twists to celebrate the local people, ingredients and flavors of New Orleans. Today, Fritai is one of St. Roch Market’s most successful stalls—having held fundraisers for Haiti, as well as garnering a number of accolades including Zagat's 30 under 30, Eater National Young Guns, and numerous television appearances including Charly’s winning Food Network's Chopped. Chef Charly is constantly creating and adding to the colorful picture of New Orleans while focusing on his history and the people of New Orleans who helped him become who he is today.

Market Supper Club (feat. Chef Sue Zemanick)

We are thrilled to announce James Beard Award-winning chef Sue Zemanick will be showcasing a four-course, Indonesian-inspired menu for Market Supper Club’s second dinner. Chef Zemanick fell in love with Indonesian rijsttafel while visiting friends in Amsterdam. Rijsttafel, a Dutch word, which literally translates to “rice table”, is a multicourse meal popular in Indonesian restaurants in the Netherlands. The sometimes elaborate feasts consist of a medley of side dishes featuring an array of flavors, colors, and textures.

Chef Zemanick hopes the evening will give guests a chance to try a variety of unique Indonesian flavors and techniques. Expect a menu punctuated with exciting flavors such as ginger, tamarind, chilies, kaffir lime, and herbs. The Mayhaw's Sophie Burton will offer a custom pairing menu of specialty cocktails and wine.

Chef Sue Zemanick knew from the young age of 15 that she wanted to be a chef after working in fine dining restaurants all through high school in Pennsylvania. She followed her passion and enrolled at the Culinary Institute of America in Hyde Park, New York, where she graduated at the top of her class and worked as an intern in the seafood department. Once she discovered her passion for cooking with fish and seafood, she knew she had to move to New Orleans.

Here in New Orleans, Sue found immeasurable inspiration that quickly began to influence her cooking and the flavors she loves to work with. She was named Executive Chef at Gautreau’s Restaurant in 2005, which led to national success, including being named 2013 “Best Chef, South” by the James Beard Foundation and “Top Ten Best New Chef” by Food & Wine Magazine in 2008. She was also featured in many food festivals, such as the South Beach and Charleston Food and Wine Festivals, Sun Valley Vintner’s Festival, and Chef’s Club St. Regis Aspen. She has made regular television appearances, acting as a judge on Top Chef New Orleans and participating as a contestant on seasons 3 and 5 of Top Chef Masters. But to this day, her all-time favorite distinction was serving as the 2015 Honorary Muse in New Orleans’ premier all-female Mardi Gras parade, Muses. Zasu is her thank you to New Orleans for providing non-stop love and inspiration through all these years.

On most Sundays, you can find Sue, her husband Jorin and their two daughters, Lola and Simone, dancing and eating a hot sausage poboy at a Second Line.
